WHere is a simplified version of a drink from a new menu. This is a party-sized premix that's bursting with essence of a holiday season, rendering it ideal for your festive gathering. Reserve the remaining syrup you can use for morning drinks, desserts, or for additional servings of the drink.
The Bikini Cocktail
Makes enough for 10 guests
For the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Premix (makes 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Method
To prepare the Citrus Syrup: Combine every ingredients into a saucepan, bring to a light boil, mixing until the sugar dissolves. Then, remove from the heat and leave to cool down fully. Pour into an clean bottle, close it and store in the fridge, it will last for up to one month.
Preparing the Batch Mix: Combine the specified liquids into one sizeable container, let it rest for one hour, then pass it through , ideally through muslin, so it's fully clarified.
To serve: Measure 85ml from the premix into your mixing glass filled with ice, gently stirring carefully for a minute until cold. Strain to a frosted cocktail glass or equivalent, decorate with a few cranberries and complete it by giving it a quick spritz of the essential oil above the glass.
